No-Bake Protein Balls

This recipe is the result of abundance. A small typo on an order last year resulted in me receiving 50 pounds of organic rolled oats instead of 5. At a loss of what to do and a desire to find ways to use them up besides oatmeal and overnight oats, I started frantically Googling “creative uses for rolled oats”. I found a plethora of no-bake granola bars but always found it difficult to cut them without them shattering. Finally, I decided to forgo the bar shape all together and just make them into little 2-bite balls.
These are now a staple in our household (and the oats are finally almost gone!). I make a large batch at once, throw them in the freezer, and take them out as needed. My partner loves them for a quick bite before heading to work or a little snack. We’ve also taken them on road trips and out camping. After sharing them with family, I’m regularly asked for more.
One of the best parts of this recipe is how easily you can modify it to fit your taste or what’s in your pantry. The two essentials are oats and nut butter but everything else is up to you!
Some fun add-ins and substitutions include:
Butterscotch or white chocolate chips.
Use any type of nut you like.
Add craisins.
Use agave or maple syrup instead of honey.
Add cinnamon, nutmeg, or turmeric.

Ingredients
3 cups rolled oats
1/2 cup ground flax seed (optional)
1.5 cup peanut butter
1/2 cup honey, agave, or maple syrup
1/2 cup chocolate chips
1/4 cup chopped pecans
Cinnamon & Turmeric
Directions
Add all ingredients to a large bowl and mix together.
Scoop large tablespoons and roll into a ball.
In a single layer, place on cookie sheet and freeze.
Once solidified, place in freezer-safe container. Move to fridge or defrost before eating. Enjoy!
